We've been enamored with the Manco tape. It's thin, and somewhat flexible. (The current brand name is ShurTape, and this is the UL 818B-FX). It's what we used for taping the aft side of the NACA ducts for the air plenum mods.

After a few days, the tape peeled cleanly off of the painted surface. Removal from the stainless steel surface was dicey, and we're left with residue. It isn't designed to be removed, so it's not a fault of the tape. We're still experimenting with solvents: acetone, Finish1, alcohol, mineral spirits...
